Thank you for tuning into “Healthy Living Wednesday!”. And Today, I would love to share with you why eating this delicious vegetable (which happens to be one of my favourites) can help you improve the quality of your overall health.

Here’s the recipe for the veggie soup:
- 1 fennel
- 4 big tomatoes
- one or two leeks
- 2 spring onions
- stock (broth) of vegetables (1/2 litres)
- cooked rice
Cut all the veggies into small pieces / slices.
Put some olive oil in a large stock pot. Start with the fennel and stirfry. Add the onions, leeks, spring onions and tomatoes. Then pour in the stock and add more water if needed. Bring the soup to a boil and then turn down the heat and let it simmer for at least 30 minutes. You can add your favourite herbs and spices.
When it’s ready to serve, put some cooked rice on your plate and dress it with your veggie soup.
