Enjoying the taste of Happiness journey and a delicious vegan recipe.
It’s “Healthy Living Wednesday”! I am super excited to share with you my personal experience of the last 10 days.
You see, I was blessed to have won a free seat in “the Taste of Happiness”. An amazing 10 day journey, hosted, conducted and facilitated by the lovely Britt Janssen from the Kitchen of Love.
Every day we dove into “a flavour” of Happiness, accompanied with fun exercises, healthy and delicious vegan recipes. She also interviewed some wonderful people asking them about what happiness means to them and how they incorporate their ideas on happiness into their every day life.

DISCLAIMER: I am not a doctor, so when you take medicine, or you are having doubts, always consult your doctor / therapist first.
Here are the ingredients for this super delicous, (almost entirely) vegan salad:
- 450 gram bulgur
- spring onions
- 300 gram cherry tomatoes
- chick peas
- 1 avocado
- one or two boiled eggs
- olive oil or coconut oil
- your favourite spices and herbs
It’s super easy and simple to prepare:
First bring the bulgur in water to boil until it’s cooked.
Boil the (1 or 2) eggs until they are cooked (the way you love them to be).
You chop the spring onions, cherry tomatoes and avocado into slices.
Roast the chick peas in a pan or in the oven.
Stirfry the spring onions and the tomatoes in a big pan with olive oil or coconut oil
Add the roasted chick peas and continue to stirr
Season with your favourite spices / herbs (including some sea salt and pepper)
Put the bulgur into the veggies and mix them all together.
At last you put the sliced avocados and boiled eggs on top and mix the salad once more.
Put the salad into a nice bowl or straight on your plate….it’s ready to serve!
